Crockpot Apple Cinnamon Coffee Cake

Crazy that 2020 is about to wrap. I mean, the longest yet fastest year yet. Wow. What's really gotten me through this tough and interesting year, is working hard to try and find the silver lining in things. And I mean, realistic, not cheesy, silver linings. For example, normally the "rule" my significant other has around the holidays is we cannot watch the Christmas Vacation movie until after Thanksgiving. But guess what? Given 2020 has been a weird and crazy year, he got weird and crazy, and we got to watch it BEFORE Thanksgiving. Silver lining. 

And for me, with Load of Crock, I have had more time to try new recipes, test things out, and one thing I have been obsessed with is a really great crockpot recipe that uses cinnamon rolls. Why? Not sure. But I've been like a dog on a bone with this. So, here it is. The crockpot apple cinnamon coffee cake. Silver lining. 

 Ingredients/Recipe:

  • 2, 12.4 oz tubes of cinnamon rolls (I used Pillsbury but, whatever your preference of brand will work)

  • 1, 20 oz. can of apple pie filling (or whatever your preference for fruit pie filling may be)

  • 1/4 cup of milk

  • 2 eggs

  • 1-2 teaspoons of vanilla

  • Cinnamon spice (a few shakes, to be exact)

 Putting it Together:

Cut up each cinnamon roll dough into 4 parts, and set aside. Also, set aside the icing that comes with these, as you will use once the dish is cooked. 

Then, in a bowl, combine the milk through the cinnamon ingredients as noted above, whisk together, and set aside.

Get your crockpot out, spray the bottom and the sides, and then layer the bottom with roughly half of the cut up cinnamon rolls. On top of this, layer the apple pie filling, ensuring that it covers the entire layer of cinnamon rolls below it. After this, take the remaining cut up pieces of cinnamon roll dough, and layer over the top of the apple pie filling. And then finally, pour your egg, milk, vanilla and cinnamon mixture over top. 

Place on low for 3-3.5 hours, then let sit either off or on warm for another 15-20 minutes, to ensure everything sets up nicely.

 Serving:

Oooh, this one is pretty straight forward. Serve it warm and serve it with some icing from the cinnamon rolls, on top!

 Load of Crock Tip(s):

  • This is great as a warmed up leftover; heat the oven to 250 and put in for 10-15 minutes, enough to soften up the apples and make it warm.

  • Any fruit filling with this will work, so if you aren’t much of an apple fan, or you just want to try a few of these, strawberry, blueberry, cherry…you name it. Just substitute the apple pie filling with your favorite!

 

 So, while it's been a tough and trying year, without question, I hope everyone, at least from time to time, has been able to find the silver linings of 2020. And if you aren't so sure on that, I can suggest trying this apple cinnamon coffee cake, as it may just be the silver lining you need as we wrap up the year, and kick things off for 2021!
