Oven Baked Chicken Breasts

Ok, friends. I have said it before, and I will say it again. I have always been leery of chicken. Always. Unsure why. But, what I do know is that it's incredibly good, and I didn't want to keep missing out on this lovely poultry, whether solo or a part of a recipe. So, about 10 years or so ago, I started working on how to oven-bake chicken in a way that cooks it nicely, but also leaves it juicy and full of flavor. And, here it is!

 Ingredients/Recipe:

  • 2-4 skinless, boneless, chicken breasts, or really, as many as you want to bake

  • Olive oil

  • Salt

  • Pepper

  • Onion powder

  • Lowry's seasoning

 Putting it Together:

Heat your oven to 350. Then,  season one side of each chicken breasts with a drizzle of olive oil, salt, pepper and onion powder. Then, flip those things over, and do the same on the other side, except, instead of using onion powder, on this side of the breasts, use the Lowry's seasoning. Place in the oven anywhere from 25-35 minutes. This time depends on the size of chicken breasts. Take the chicken out and let it sit for 5-10 minutes, tenting under tin foil is a great option for this, but not required.

 Serving:

These are so incredibly juicy, we eat them as simple chicken breasts, usually with a side of rice, or butter noodles. However, I also season and bake my chicken this same way, even when it is getting shredded or diced up and going into another recipe. It really helps all recipes have a great taste and ensure the meat doesn't get too dry.

 Load of Crock Tip(s):

  • Coming from a woman who is leery, I am telling you, the time it bakes may not feel like enough time, and of course, always cut open one of the thicker parts of the breast to ensure it's cooked to your liking/not too pink, but this amount of time really allows the chicken to cook nicely and stay juicy!

  • Never be afraid to change around the seasonings with other items you normally season your chicken with; you can really make this your own.
