Creamy Chicken Wild Rice Soup

Alright, friends! We are back with survey says, part 2! As promised, for all of you who voted for a broth and cream based soup, I am here for you and this, and give you this creamy chicken wild rice soup!

Ingredients/Recipe:

  • 1 C cut up carrots

  • 3 1/2 C chicken broth

  • 1/3 C of wild rice

  • 1/4 tsp thyme

  • 1 tsp celery salt

  • 1 tsp of onion flakes

  • Salt and pepper to taste

  • 1 1/2 cup of shredded chicken

  • 1 C of heavy whipping cream

  • 3 tbsp flour

  • 2 tbsp butter

Putting it Together:

Place the carrots through the salt and pepper in the list above, in the crockpot, and place on high for 2.5 hours. While this is cooking, cook the chicken breast in the oven, and shred up 1 1/2 cups and set aside in the fridge until the 2.5 hours are done.

Once the 2.5 hours have ended, add in the chicken through the butter in the list above, and then place on low for 1 hour.

 Serving:

We tend to gravitate toward carbs in our house, so we had with some crunchy bread, and it was fantastic! We also had a round with classic saltines, and those were great too! This is great fresh out of the crockpot and also as a leftover.

The amounts included here will make 4 good size bowls of soup, so if you are in need of more, wanting leftovers, etc., I would definitely double the above to make sure there is plenty!

 Load of Crock Tip(s):

  • People in our household do not care much for onions or celery (they shall remain nameless, but I will tell you, it's not me) so as you see, I used celery salt to give it that flavor and onion flakes for the same. However, feel free to use actual onion and celery cut up into chunks, if that suits you and/or your household. I am working on mine…promise.

  • While putting this together, you may think 'this amount of rice and chicken feels like I am skimping,' which I get, I was there. I found as I was doing some various test runs with amounts, that when I did more than this, it became very thick, almost like a casserole. Of course, everyone should do what they like best, but if you want it to have more of a creamy soup feel, this amount works perfectly. If you want to thicken it up, porridge style, then for sure add in some more to your liking!

While I know it may feel disappointing that through our 'survey says' episodes, we could not get Steve Harvey to join us on our shows, I assure you, when you eat this soup, it will feel the opposite of this. It will feel like you are 18 points away from winning the $20,000, and the last question is, "We surveyed 100 people, name a soup that makes everyone feel the opposite of disappointed. You said, 'chicken wild rice soup' and the survey says…19!" And the crowd goes wild!

PS- I appreciate that for anyone who doesn't watch Family Feud, this probably feels wildly out of place, but no matter, I hope you enjoy the soup!
