Fiesta Lime Shrimp and Rice

FRIENDS! We are back! And man, does it feel good. So good. LL Cool J said it best- don't call it a comeback, I've been here for years! And this has been playing on repeat in my head as we prepared this comeback recipe and YouTube episode. It's a BIG come back…well actually, it's more accurate to say it's kind of shrimpy.

Ingredients/Recipe:

  • 25-30 peeled and deveined large cooked shrimp

  • 1/4 C fresh cilantro

  • 1 packet of taco seasoning 

  • 1 1/2-2 C long grain rice

  • 3/4 can of sweet corn (undrained)

  • 3/4 can of black beans

  • 2 C of chicken broth

  • 2 tbsp of butter

  • 2 limes

 Putting it Together:

In a bowl, mix your shrimp, taco seasoning, cilantro and lime juice from one lime, together. Cover and set in your fridge.

 Grab your crockpot and spray the sides and bottom. Add the rice through butter, and then squeeze the lime from one lime over the top. Mix all together. Place the crockpot on high for 2 hours.

 At the 2 hour mark, add the shrimp mixture from your fridge, and mix all together really well. Place the crockpot on low for 20 minutes and then move to warm. 

 Serving

Three great ways that I can see you can consider eating this lovely dish. 1. Create a heaping pile of the rice, bean and corn mixture, and then add shrimp to the top and eat like a jambalaya. 2. Make as shrimp tacos, serving in a soft shell taco. 3. Make a shrimp burrito bowl. 

 And for any of these options, you can always add some of your favorite taco toppings (lettuce, guac, cheese, salsa, sour cream, etc.) However hits your taste buds the best! 

 

Load of Crock Tip(s):

  • Not a big fan of shrimp? Substitute with chicken by seasoning chicken breasts with the same (taco seasoning, lime juice, and cilantro) then bake in the oven at 350 for 35- 40 minutes. Take out, shred up the chicken, and then add the shredded chicken to the crockpot, and mix all together really well.

  • Other great adds to the rice mixture to consider are diced tomatoes or green chiles.

  • If you are not serving immediately once done, (which is ok, because it's a crockpot baby!), you may notice it thickens up quite a bit when sitting on warm (which is also ok, btw). But if you want it a little less chunky, about 5 minutes before you are going to serve, add a little chicken broth to loosen it up, stir up, and let it continue to sit on warm for a few minutes.

 

So, please go ahead and DO call it a comeback and enjoy this big, shrimpy comeback dish!
