Apple Crisp in the Crockpot

When it comes to fall, I am an apple gal. Nothing against pumpkin spice, I do love that, too, but at the heart of it all, it's apple for me. So, given this lovely Harvest and Fall season, and my love for apples, we are doing apple crisp in the crockpot! Plus, in my head, Pumpkin Spice is the long lost Spice Girl…you know, the one who LOVED the Harvest and was always jonesing for a good pumpkin spice latte? Anyway…

Before anyone freaks out about all that is included in the recipe below, stick with me here, I am going to break this down into some very easy steps, promise, from a woman who gets scared by lots of steps and ingredients, you can trust me, it's easy, you've got this!

Ingredients/Recipe:

  • 6-8 Granny Smith apples

  • 1 C of old fashioned oats

  • 3/4 C of flour

  • 3/4 C of brown sugar

  • 1/4 tsp of salt

  • 1/2 C (1 stick) of butter, cold, cut up into squares

  • 2 tablespoons of sugar

  • 2 tsp of cinnamon

  • 1/4 tsp nutmeg

Putting it Together:

For the rolled oats topping, in a bowl combine:

  • 1 C of old fashioned oats

  • 3/4 C of flour

  • 1/4 C of brown sugar

  • 1/4 tsp of salt

  • 1/2 C (1 stick) of butter, cold, cut up into squares

  • Mix all up until all of the butter is nicely coated by the topping

Apples:

  • 6-8 Granny Smith apples

  • Peel them all

  • Cut all peeled apples up into roughly 1/4 inch thick slices

In the crockpot:

  • Spray the sides and bottoms

  • Add the peeled and sliced apples and add the following on top of the apples:

    • 1/2 C of brown sugar

    • 2 tablespoons of sugar

    • 2 tsp of cinnamon

    • 1/4 tsp nutmeg

  • Mix all up until all of the apple slices are coated

Add the oats mixture on top, the more you stir it in, the softer it will be. The less you mix it in and let it just sit on top, the crispier it will be.

 Add roughly 1/4 C of old fashioned oats on top then cook on low for 3 hours. Once 3 hours is up, let sit, with the crockpot off, for 30 minutes.

Serving:

You will truly only be doing yourself a favor if you serve this warm and with vanilla ice cream. If my grandfather were still alive, he would argue the ice cream is non-negotiable.

 Load of Crock Tip(s):

  • Some of you may own an actual apple skin peeler, but if not, a potato peeler works great! I used it and it was so helpful!

  • If you like your apple crisp really crispy, do not mix in the oats mixture, just leave it on top of the apples. However, if you like it a little less crispy, mix a little into the apples and put the rest on top.

That's all! Like I said, I know at first glance this may look daunting, but truly, super easy once you break it down, and super good, once it gets in your belly. And let's be really honest here, if Pumpkin Spice were the long lost Spice Girl, she would totally be into apple crisp. So, I'll tell you what I want, what I really, really, want.
