Baked Potato Soup

Friends…it's cold! No matter where you are geographically speaking, relative to what your warm is, it's cold. Best way to keep warm? Bacon. Ok, not just bacon, although, it is warm, and could help, but how about a baked potato soup topped WITH bacon? This is a crazy simple recipe and my first crockpot soup, which will not only make your tummy happy, but make all of you, warm. 

Ingredients/Recipe:

  • 1 box (32 oz) chicken broth

  • 1 can cream of chicken soup

  • 1 can cheddar cheese soup

  • 1 28 oz bag of cubed, frozen potatoes

  • 1 cup of diced carrots

  • 1 cup of cubed ham

  • 1 8 oz cube of cream cheese

  • 1 cup of cheddar cheese, shredded (garnish)

  • 6-8 pieces of bacon, cooked, crushed (garnish)

 Putting it Together:

Place the chicken broth through the ham (in list above) into the crockpot, and place on low for three hours. After this, add the 8 oz of cubed up cream cheese, and mix all together. Place it back on low, for 1 additional hour. After this hour, the cream cheese should be melted- give it a good mix, getting all of the melted cream cheese nicely mixed in. Put on low for another 30 minutes, and then  let sit (either warm or off) for 15-20 minutes. 

Serving:

Serve hot and garnish WITH bacon and shredded cheddar cheese and the crushed up bacon. Or any other toppings you may use on a baked potato.

Load of Crock Tip(s):

  • Use closer to two bags of the frozen potatoes if you really want this soup thick with potatoes. If you prefer it a little less thick, stick with just the one bag

  • Broccoli is another great ingredient you can to this recipe to thicken the soup up even more

  • This soup freezes great for up to 3 months, so feel free to make a lot, and freeze what you don't eat, because let's be honest, it will probably come in handy again, yet this winter!
