French Toast in the Crockpot

Christmas morning breakfast. Sounds lovely. Of course, for many, unless jolly ol' St. Nick is cooking breakfast on his way through, based on time, a Christmas breakfast may not always be doable. But, with this easy crockpot French toast, with make ahead options, you can cross off 'making breakfast for Christmas' from your wish list from the big guy. Oh, and this episode and recipe also include a bonus, scrambled egg cups, so get excited!

Ingredients/Recipe:

  • Loaf of French bread (check your local bakeries for day old bread, this is perfect for this recipe!)

  • 6 eggs

  • 2 cups of 2% or whole milk

  • 1/4 cup of butter

  • 1/2 cup of brown sugar

  • 1-2 Tbsps. of cinnamon

  • 1 Tbsp of nutmeg

 Putting it Together:

The night before you want to enjoy this lovely breakfast dish:

  • Cut up the loaf of bread into (roughly) good sized 1 inch chunks and put in a bowl

  • Separately, whisk together the 6 eggs, 2 cups of milk, and 1 tbsp of cinnamon (you can also add vanilla if you want to get crazy), and then once nicely whisked together, pour this over the cut up bread

  • Cover the bowl with the bread and let it sit in the fridge for at least 4 hours, and up to overnight

  • In another bowl, combine the brown sugar, nutmeg, and another tbsp of cinnamon, mix together, and then cover and set aside

 Christmas morning (or whenever you want to put this together)

  •  Spray your crockpot, sides and bottom, and then get the cut up bread from the fridge, and put in the crockpot

  • Get the brown sugar mix and add in a 1/4 cup of butter, cut up

  • Mix the butter in so that all pieces are coated, and then add this crumble to the top of the bread in the crockpot

  • Place the crockpot on low for 4 hours

  • Once the 4 hours is up, let the French toast sit for at least 15 minutes, can be longer, either on warm or with the crockpot off

Serving

Serve immediately while still warm, with butter and syrup and consider serving with the below!

BONUS RECIPE!

If you are feeling extra crazy this holiday season, you can also make these very simple scrambled egg cups in the oven, also with night before make ahead options, if you desire. If not, making the day of is super easy as well. You will need a 12-cup muffin tin for these cups:

 Ingredients/Recipe (for making 12 cups):

  • 9 eggs

  • Roughly 1 cup of 2% of whole milk

  • Salt and pepper to taste

  • Bacon (or any other meat you may want to include)

  • Shredded cheese

 Putting it Together:

  • In a bowl, whisk together the eggs, milk, salt and pepper, and then in a 12 cup muffin tin (sprayed), pour egg mixture into each cup, filling each cup about 3/4 of the way. Note: If you want to do a night before make ahead, mix the eggs, milk and salt and pepper together, and cover and sit in your fridge.

  • Once poured into the muffin tin, add the bacon and cheese, and/or any other ingredients you may love in your eggs

  • Place the muffin tin on a baking sheet, and then cook at 350 degrees for 15-20 minutes

  • Once done, take out of the oven, and let sit for 5-10 minutes

  • Scoop out each egg cup and serve warm

 Serving:

Scoop out each egg cup, and serve warm, dashing with a little salt and pepper.

Load of Crock Tip(s):

  • For the French toast, I recommend placing half the bread in the crockpot and doing half the crumble topping over it, and then doing the rest of the bread on top of that, and the rest of the crumble topping over the top/second layer

  • If you do make the night before serving, leaving it on warm once the 4 hours is up works perfectly

Seriously. Christmas morning breakfast can be a thing! And a thing that doesn't have to add to some of the already stressful items that can come with the holidays.
