Chicken and Cheese Tortellini

Video below for an “Italian dish,” a term I use loosely, but it does include pasta!

While my 17+ year old Venus de Milo apron is in the shop (i.e., getting some rips and tears sewn back together) I thought it would make sense, in honor of her/the apron being Italian, and actually something I got from a market in Florence, to put together and share an Italian dish. Now, an Italian may argue that this would not constitute as an "Italian dish" however, it does include pasta, so based on that, I am going for it with this 4 ingredient, chicken and cheese tortellini, crockpot dish. 

Ingredients/Recipe:

  • 3 chicken skinless/boneless chicken breast

  • 2 tablespoons of chicken broth

  • 2, 15 oz. jars of alfredo sauce

  • 1-2, 20 oz. bags of three cheese tortellini

 

Putting it Together:

Spray your crockpot, bottoms and side, place chicken in the crockpot and add the chicken broth. Cook on low for 2 to 2.5 hours.

Add the two jars of alfredo sauce and place back on low in the crockpot for 1.5 hours.

After the 1.5 hours, shred the chicken up in the crockpot, and then place back on low for another 15 minutes.

After 15 minutes, add the 1-2 bags of three cheese tortellini, mix up well with the chicken and alfredo sauce, and then place back on low for 45 minutes.

 

Serving

Once done, serve immediately, garnishing with shredded parmesan or asiago cheese. A side salad or some crunchy bread (or both!) pair really well with this main dish.

 

Load of Crock Tip(s):

  • If you like your pasta a bit creamier, stick with just one bag of the three cheese tortellini, but if you prefer it a little thicker with the pasta and chicken, and less creamy, add 1.5 bags of the cheese tortellini, to thicken it up

 

So, again, an Italian would probably argue, this doesn't actually qualify as an "Italian dish" and I get it. But, I'm sticking to it; it has pasta! And it's an easy one to add into your crockpot dish rotation. Oh, and Venus de Milo apron…this one is for you!
