Corn Casserole

2-Minute Make video below on this easy, Thanksgiving table, crowd pleaser

Happy almost Thanksgiving, my friends! During this time of the year, it feels like time is of the essence even more than any other days during the year, with get togethers, planning for meals and events, etc. So, what better time to give you a quick and easy, 6-ingredient corn casserole, that will please any crowd this holiday? And, as a 2-minute make, to boot!

 Ingredients/Recipe:

  • 1 can cream style corn

  • 1 can whole kernel corn, drained

  • 1 C of sour cream

  • 2 eggs, beaten

  • 1 stick (1/2 C) of butter, melted

  • 1 - 8 oz. package of corn muffin mix (Jiffy is my go-to)

Putting it Together in the Crockpot:

Mix all 6 ingredients together until they are well mixed. Spray the sides and bottoms and of your crockpot really well, and then pour in the mixture. Place on low for 5-5.5 hours, until the edges have slightly browned. You can eat immediately, or place on warm as needed.

 Serving

This is the perfect side dish for your Thanksgiving table, or any meal that is in need of an easy, delicious, comfort food side dish. A long-standing one in my home growing up.

Load of Crock Tip(s):

  • This can also be done in the oven, same process, mix it all together, then spray into a greased casserole dish and cook at 350, uncovered, for 50-60 minutes

  • If hosting a group and making a meal for Thanksgiving, or any event, this is an easy dish to throw together and cross off your list first thing in the morning, while you work on other food
