Crockpot Chicken Queso Tacos

Here is a fun riddle. What does taco spell backwards? O, cat. Which can be used how 'Oh, snap!' is (or was) used. So, for example. O, cat! We are making chicken tacos! Trust me, this phrase will soon be sweeping the nation. 

It's a stretch, I do understand, but what's not a stretch, is super easy and WILL be sweeping the nation, are these chicken tacos. 6 ingredients only! A simple chicken taco recipe that I got crazy with and added queso. QUESO. Who doesn’t love cheese? And melted, thick, cheese, to boot!

Ingredients/Recipe:

3-4 skinless, boneless chicken breasts

1 packet of chicken taco seasoning

1 can (15 oz) of diced or crushed tomatoes (undrained)

1 can (4 oz) of mild diced green chiles

1/4 cup of chicken broth

1/2-3/4 cups of queso (can be store bought or homemade)

Tacos shells (soft or hard)

 Putting it Together:

In a bowl combine:

  • The can of tomatoes

  • The can of diced green chiles

  • 1/4 cups of chicken broth

  • Mix all together and set aside

 In the crockpot:

  • Spray the sides and bottoms

  • Lay chicken breasts across the bottom of the crockpot

  • Season all chicken breasts with the packet of chicken taco seasoning

  • Pour the tomatoes, green chiles, and chicken broth mixture over the chicken

  • Place on low for 2-4 hours (this will depend on how thick the chicken breasts are)

 Once chicken is done, shred up in the crockpot. Add in 1/2 to 3/4 cups of queso, and mix together with the chicken. Place crockpot back on low for 30 minutes, then after 30 minutes, turn the crockpot off and let the chicken sit for about 20 minutes.

Serving:

Serve on your preferred taco shell. I used the soft shell flour street tacos, and three chicken breasts, which made roughly 15 of these size tacos. I served with a little sour cream on the taco and then garnished with a little shredded lettuce. They were so good, just enough kick with the chiles and a nice blend with the added queso.

Load of Crock Tips(s):

  • Instead of one can of diced tomatoes and a can of green chiles, you can also use the 14.5 oz can of diced tomatoes with green chiles -all you need in one can!

  • If you feel there is still a little too much juice after shredding up the chicken in the crockpot, use a ladle or large spoon to remove the unwanted excess

  • If not a fan of queso, you can make exactly the same way, just skip adding the queso after you shred the chicken, and eat as is. Or use the queso on the side. With or without, they are delicious!
