Warm(ish) Weather Pork

This recipe was on my mind and is especially for those of us who have had the luxury of experiencing warmer weather...I appreciate that doesn't include all of us. Present company included. But, whenever the warm weather gets to you, this will be an easy and light recipe to throw together, as Spring and Summer get into full swing!

Ingredients/Recipe:

1 pork tenderloin

1 1b. of carrots

1 to 1 1/2 lbs of potatoes (I used a trio of fresh creamer pots and loved them!)

1 large red onion

1 cup of beef broth

1/3 cup of soy sauce

1/3 cup of dijon mustard

1/4 cup of brown sugar

Salt

Pepper

Garlic seasoning

Putting it Together:

Season the pork tenderloin with salt, pepper, and garlic seasoning. Cut up onion into large chunks. Spray your crockpot, sides and bottom. Place half the carrots, half the potatoes and half the onion chunks in the bottom of the crockpot. Place the pork tenderloin on top of the vegetales. Add the remaining carrots, potatoes and onion chunks.

In a separate bowl, mix together the brown sugar, dijon mustard, soy sauce and beef broth, and then pour over the pork and vegetables. Optional: sprinkle a little more salt, pepper, and garlic seasoning over the top, for extra taste. Cook on low for 5-6 hours or high for 3-4 hours.

Serving:

Once the pork is done, remove from crockpot and slice up. Serve with the carrots and potatoes, and drizzle juices from the crock pot on the pork as well as the vegetables when serving, to ensure you get the full effect of this light and juicy loveliness.

Load of Crock Tip(s):

  • Where possible, it is highly recommended to eat this meal outside, or at least in front of a window with a nice breeze

  • Leftover pork could be mixed with barbecue sauce and heated back up to enjoy some pulled pork sandwiches. I mean, just saying. I love a good leftover

  • When cooking, whether on high or low, as you near the last hour, keep an eye on the pork to ensure it does not overcook and get too dry

Here’s hoping you are somewhere that is starting to be somewhat warm(ish) to enjoy this meal to it’s full extent. And hey, even if you have to go out to your garage and just crack the door open a little, it still counts as fully taking advantage of this warm(ish) weather pork!
