Anyone who knows me knows I am far from the "fancy" end of the spectrum, but this recipe really does give off a fancy feel, and can be great for an evening meal, or a dish to make if hosting others.

Ingredients/Recipe

3-4 chicken breasts (thawed, not frozen)

1/2 lb. of semi-thick sliced ham

6-8 slices of swiss cheese

1 6oz. Package of cornbread stovetop stuffing

1 can of cream of chicken soup

1 stick of butter

1/4 cup of milk

1/4 tsp of salt and pepper mixed

1/4 tsp of garlic powder

1/2 tsp of oregano

Putting it Together:

Spray your crockpot, sides and bottom, and place the chicken breasts inside. Over the chicken layer the ham, and over the ham, layer the swiss cheese. Set aside.

In a separate bowl add the cream of chicken soup, milk, salt, pepper, garlic powder, and oregano. Mix all together, and then pour over the chicken, ham, and cheese in the crockpot. Spread evenly over all.

Pour the 6 oz box of cornbread stuffing over the top and then melt the stick of butter, and pour over all in the crockpot. Cook on low for 5 hours.

 Serving:

This chicken pairs great with a simple side salad. Also, a little lemon squeezed on the chicken right before serving can add a refreshing twist.

 Load of Crock Tip(s):

  • Using the low feature for the full 5 hours will ensure that that with all the layers of food that the chicken gets cooked all the way through, but does not get too dry

  • This recipe serves 4-6 people

  • This goes great with a cold white wine or really any summer drink of choice
