Pulled Turkey Sandwiches

Thanksgiving leftovers. Every year I promise myself I am going to eat them all, specifically the leftover turkey, and every year, I fail. Like it's math class. But not this year. No. We are taking all of Tommy turkey down, with these 4-ingredient pulled turkey and cheese sandwiches! 

 Ingredients/Recipe:

  • 4 cups of cooked, shredded turkey

  • 8 oz of cubed Velveeta cheese (optional)

  • 1/4 Cup of chicken broth

  • 1 can of cream of mushroom soup (use 2 cans if not using Velveeta)

  • Hamburger buns(for serving/eating)

Putting it Together:
Spray your crockpot, sides and bottom, and then combine the cooked, shredded turkey, cheese, chicken broth and cream of mushroom soup and mix together. Cook on low for 1-2 hours, until all of the cheese is melted. Check about 1 hour in; if it looks a little dry, add up to another 1/4 Cup of broth. If it looks like it's got enough  juice, you can let it go. Once the cheese is nicely melted, give the mixture a good stir and then turn off the crockpot and let sit for 10-15 minutes to let all the juices soak in.

Friends, please note, for some reason I had 3-4 hours on low in my head when I did the filming for this, which was and is not correct. So, when you make this, do follow the above instructions of low for 1-2 hours, not low to 3-4 hours as I mention in the video. Sorry for any confusion! I guess maybe too much crockpot-ing going on around here…nah, no such thing.

Serving: 

Serve warm on hamburger buns or bread. This amount makes 6 good sized sandwiches on hamburger buns.

  • The cheese/Velveeta is optional, so if you prefer without cheese, simply remove the Velveeta, and plan to add an additional can of cream of mushroom soup

And that's it.  Byyyyyeeeee leftover turkey. And by leftover, I mean, RIGHTover, because believe me when I say, there is not one thing wrong with these sandwiches. 2019. The year I took down my Thanksgiving leftovers. That's a wrap!
