Cranberry Pork Loin

Happy (almost) Thanksgiving! This is one of my favorite times of the year, as everyone begins to prepare for lots and lots of eating. At least for me, it's usually an inordinate amount of eating, right up until the New Year! And while I absolutely LOVE turkey, I do know that turkey isn't always everyone's Thanksgiving go-to, or sometimes, people are attending or hosting multiple Thanksgiving meals, and therefore, may be looking for an alternative.
Well, your turkey alternative is here! Below and included in my video, is all you need to know for preparing a cranberry pork loin for this year's Thanksgiving meal, or really, for any upcoming meal. This is super easy, 4 ingredients only, and, this is a fantastic recipe that you can easily double, if you are preparing for a group larger than 4-6. At minimum I would bet at least one Tommy Turkey will thank you for considering this option!
Ingredients/Recipe: (serves 4-6)
1 pork loin (24 oz)
1 can of whole berry cranberry sauce (14 oz)
1 packet of dry onion soup mix
1/4 cup of butter
Putting It Together:
In a bowl, combine the can of whole berry cranberry sauce with the packet of dry onion soup mix. Mix these together until the soup mix is mixed in very well with the cranberry sauce and set aside.
Spray your crockpot and place the pork loin in the crockpot. I would recommend a little olive oil, salt and pepper over the top of the pork loin. Melt the 1/4 cup of butter and pour over the pork loin. Then, pour the cranberry sauce and dry onion soup mix over the top, working to get the pork loin covered with the mixture as best as you are able. Cook on low for 4 hours and then let it sit for about 10-15 minutes when done.
Serving:
Take the pork loin out, and to best capture some of the flavors, cut the pork loin up and then spoon/drizzle some of the juices from the crockpot over the loin, before serving.
Load of Crock Tip(s):
To capture more of a cranberry flavor vs. an onion flavor, either add a can of cranberry or reduce the amount of the dry onion soup you use in this recipe
Do you remember Adam Sandler’s Thanksgiving song? One line has been in my head for awhile now: ‘A turkey for me and and turkey for you…let’s eat turkey in a big brown shoe.’ Ring a bell? I felt that this alternative really needed it’s own song line as well, so sing it with me! ‘Pork for you, and pork for me…let's eat pork with cranberry!’ It's catchy, be careful!
