Air Fryer Caprese Frittata

I decided to step away from the slow cooker, just for today, don’t worry, and try my hand at the infamous air fryer! I have had one for years, and use it quite often, and recently have been wanting to try eggs in it. With Easter being this Sunday, I thought it was a great time to give it a try and, if I could figure out, potentially have an easy option for our holiday meal! Not shockingly to anyone who has been a part of this community for awhile, I opted for a caprese frittata, because, well, basil. And it turned out SO good! Ok, so here we go, this is how it all shook out.

Ingredients/Recipe:

  •  6 eggs

  • 6-8 basil leaves, chopped/torn up

  • Cherry tomatoes, sliced up

  • Mozzarella balls or log, sliced up

  • Olive oil

  • Salt and pepper

 Putting it Together:

Preheat the air fryer to 350 for 5 minutes. While this is happening, gently beat up your eggs, a little olive oil, the cut up basil, and some salt and pepper. Also a great time to slice up your tomatoes and mozzarella. Once heated, spray the bottom of the air fryer and pour the eggs into the bottom of the fryer (if you have a round air fryer, if not, I believe best to use a round air fryer pan that you sit into the fryer) and then air fry at 350 for 5 minutes. Once the 5 minutes is done, open up and then place the sliced tomatoes and mozzarella slices over the top of the frittata. Note, at this point, the outside edge will be cooked, inside will still be runny, which is ok. Then, place the air fryer back on 350 and cook frittata for another 5-7 minutes. Once done, the edges will be brown and crispy, and if cooked through, the frittata should slide nicely out of the pan onto a plate.

Serving:

I added some freshly cracked pepper and salt to mine, and, wait for it…drizzled some balsamic glaze over it. Oh wow. It was so good. I appreciate that balsamic glaze on eggs may not be everyone’s jam ( I really want to make a jam vs. glaze pun here, but won’t), so can confirm, without balsamic it is still super delicious.  I recommend eating hot as the mozzarella is super oozy and lovely. I had some fresh fruit and a mimosa with mine, and to say that it was one of the best parts of my morning, would be an understatement.

Load of Crock Tip(s):

  • If you are looking for a really thick frittata, up the eggs to 8, and then adjust cook time accordingly;

  • This can be made with nearly anything, so feel free to get crazy and throw some of your favorite items in it like ham, mushrooms, feta cheese, peppers…I am hungry again; and

  • This serves like a pizza, meaning, you can cut into triangles, so if making for a crowd, the nice part is you can make these quickly, and can always keep the made ones in the oven to keep warm, until all are done.

The air fryer egg adventure did not disappoint. Whether for Easter or just a quick meal option, this proved to be simple and delicious. And even better, so many options based on your taste buds or the taste buds of those for whom you may be cooking.
