Spinach Artichoke Dip

The big game is upon us, friends! And even if you are not a football fan, or, let's just say, I'm just spit balling here, your favorite team since you were 8 got beat in the NFC Championship game and you are still trying to get over it, this is still a great time for food, drinks and friends! Oh, and funny as hell commercials. And as such, I have the perfect, simple, and super tasty dish for any gatherings you may have planned for the game, or really, for any gatherings at all.
Ingredients/Recipe:
1, 14 oz can (drained) chopped artichoke hearts
2 C frozen spinach (packed)
1, 4 oz can of green chiles
3/4 C of mayo
1/4 C of sour cream
8 oz of cream cheese, cubed
2 C (1 package) of shredded parmesan cheese
1 C of shredded mozzarella cheese
Putting it Together:
Put all ingredients into crockpot, except for the cubed cream cheese and 1/4 C of the shredded parmesan cheese. Mix it all together really well, and then add cubes of cream cheese on top. Place on high for 1 hour, at which point it should be bubbly and starting to brown a little. Take off the lid, add a little salt and pepper to taste, and give the dip a good mix, getting all of the now softened cream cheese mixed in really well. Then, sprinkle the remaining 1/4 C of shredded parmesan over the top, move to LOW for another 30 minutes, until the parmesan cheese has gotten nicely melted on top. Then move to warm and let the dip all soak together for another 20-30 minutes.
Serving
Crusty bread is my go-to, to use with this dip, and quite frankly, with anything I can possibly manage to make crusty bread work. Crackers, veggies, and tortilla chips are also all excellent options! After the dip has been on warm for 20-30 minutes, you can serve right away, or you can let it sit on warm until it is eating time.
Load of Crock Tip(s):
I used green chiles to give it a little kick, but not required. You could also add in onion, or garlic, any flavors that your favorite, they all work great in this dip!
SO MANY cool leftover options, so don't be afraid to make this whole recipe. A few fun ideas for leftovers- quesadillas with the dip inside and shredded mozzarella cheese, a grilled cheese with the dip in the sandwich along with some provolone cheese, maybe a slice or two of tomato, or, pasta! Mix this in with your pasta of choice for a flavorful pasta dish!
I did some research, so cannot speak directly on this, but it seems that you can have luck with freezing already baked spinach artichoke dip for up to 2 months. So, another great reason to make as much as you want, especially if you know you have another gathering coming up soon, you can just grab this out, let it thaw, and throw it back in the slow cooker!
Whether watching the game for the game, or the commercials, or using it as a reason to see friends and eat food, or hoping a get together with all of these things will be your therapy for getting over your team not being there (just in theory, not directed at anyone specific) I hope everyone enjoys the day, the commercials, the game and the food!
