Reuben Dip

March 17th is one of my favorite days of the year; not only is it one of my very best friend's birthdays, but it is also St. Patrick's Day. For three reasons, I really enjoy this day: 1. Green is my favorite color 2. I love beer and 3. Corned beef. It is the one day of the year that it is socially acceptable to gorge on corned beef.

Ingredients/Recipe:

  • 8 oz of softened cream cheese

  • 8 oz of corned beef- chopped up

  • 1 cup of shredded swiss cheese

  • 1/2 cup of sauerkraut (drained)

  • 1/4 cup of sour cream

  • 1/4 cup of thousand island dressing

Putting it Together in the Crockpot:

Spray your crockpot, bottom and sides, add all 6 ingredients above, and then mix them all together. Place the crockpot on low for 2-3 hours, then move to warm or turn off.

 Putting it Together in the Oven:

Spray a pie plate, bottom and sides, and set aside. In a bowl, mix together all 6 ingredients above and then put them into your sprayed pie plate. Cook at 400 degrees, for 15-20 minutes, until the dip is bubbling.

 Serving

Serve hot. I recommend serving with a triscuit cracker, as it gives it a good crunch. Otherwise, you can cut up rye bread and make little reubens, also an excellent choice.

  • If you like reubens, you will love this dip

  • If you prefer the dip to have a crispier topping, the oven way of making will be your best option

Enjoy this dip on the one day of the year that it is acceptable by all to really get after the corned beef. Or, if you are like me, and need your corned beef or reuben fix more often, enjoy this every month. No matter, everyone have a safe and healthy March 17th, and regardless of the day of the year, don’t be afraid to get after the corned beef!
